It began with a word for delicious.
MIAM is the French equivalent of “yum” — the small, involuntary sound you make when something is just right. We named the café after it because that's the whole ambition: a place where the first bite earns a quiet mmm, and the morning slows down to match.
We opened our first room in Wynwood with a single espresso machine, a stack of cast-iron pans, and a stubborn rule — nothing rushed, nothing reheated, nothing we wouldn't serve our own family. Four rooms later, that rule hasn't moved an inch.

Ce qui compte
Three things we won't rush.
01 The batter
Our pancakes rest, rise, and cook to order on their own clock. No griddle gets ahead of the dough — that's how the stack stays cloud-soft in the middle.
02 The pour
Single-origin beans, dialled in every morning, pulled by a barista who actually watches the shot. A latte is poured properly or it's poured again.
03 The welcome
Tables are yours for as long as you want them. We'll bring the second pot of coffee before you ask, and we'll never hover with the check.
De la ferme à la table
Sourced close, baked here.
Bread is laminated and baked in-house every morning. Eggs are free-range from a farm two hours north. Fruit is whatever's ripe that week, not whatever ships cheapest. We'd rather change the menu than lower the bar.
